COCONUT SHRIMP
The perfect easy hors d’oeuvre for your Super Party!
Ingredients (Makes 15-20 shrimp)
1 quart buttermilk pancake mix, dry
½ cup measure of chili powder
Salt & pepper
3 eggs
1 can Thai coconut milk (unsweetened)
Directions
Mix all ingredients together
Coconut Crust Ingredients
1 quart Sweetened coconut flakes
¼ quart Unsweetened coconut flakes
½ quart fine bread crumbs
Directions
Mix all ingredients together. Dip the skewers in the batter mixture then let any excess
drip off. Next, dip it into the crust mixture and place on a sheet pan and refrigerate.
Once set; fry in 325° oil; until the skewers are brown.
*Do not let the oil get too hot or the skewers will be browned on the outside and RAW in the middle.*
